My Story
When I embarked on the Plant Paradox diet in the summer of 2017, one question loomed: Could I sustain this healthy lifestyle despite my love for desserts? Naturally, the first recipe I tried was for muffins. I told myself, “If I enjoy this muffin, I think I can do it!”
And here I am, seven years later. Not only have I sustained my healthy lifestyle, but it has also become second nature. Along the way, I became a recipe creator, initially to keep track of all the delicious treats I was making.
Now, there are nearly 100 lectin-free dessert recipes on this website and in my two cookbooks. Finally, I am excited to share a round-up of my favorite ones.
In this collection, you will find lectin-free cookies, cakes, galettes, cobblers, crepes, bars, and even one of my all-time favorites—a lectin-free tiramisu. I’ve left muffins out of this post because I believe they deserve their own special collection (coming soon!).
What is a lectin-free dessert?
Lectins are anti-nutrients found in certain plants that can cause gut damage and lead to a leaky gut. But a lectin-free dessert is more than just a sweet treat without lectins. These desserts are also free of refined sugar and generally free of caloric sweeteners, using minimal amounts of any sweeteners. While there are a few natural sweeteners that are considered safe on the Plant Paradox program, I prefer to remain cautious until more research is available. So, I use them sparingly.
Some of these desserts are also dairy-free. When I do use dairy, it is always of the highest quality, made with casein A2 milk. You can find a list of approved dairy products in my printable Plant Paradox Food List.
The flours I use are all lectin-free, ranging from low-carb options like almond, tigernut, and coconut flours to lectin-free grains like sorghum flour. Desserts containing fruits are typically made when those fruits are in season.
Most of these recipes include nutritional labels. Please let me know in the comments below if you have any questions or requests for specific lectin-free desserts. I’m excited to create new healthy versions of your favorite desserts.
