Sweet Potato Brownie, Vegan, Low Histamine

As I’m writing this I’m stuck in the house in Dallas due to the corona virus situation. I’ve been baking a lot these days and usually part of what I make, I freeze. This gives me the opportunity to use a lot of the ingredients I have around the house before our big move to Denmark, and at the same time we have a back-up just in case. These lectin-free sweet potato brownies are amazing because they only require a few ingredients, and it leaves room for flexibility in case you don’t have one of the ingredients.

Lectin-Light Adzuki Beans Brownie with Olive Oil and Macadamia Nuts

There is a big preconception out there, that if you are following the Plant Paradox program you can’t eat beans. To quote Dr. Steven Gundry, “you can eat beans, just detoxify them first”. So, if you have passed Phase 1 and Phase 2 of the Plant Paradox and willing to give Phase 3 a try, beans and legumes are a new fascinating world to explore. It didn’t take me long to use beans to make a sweet treat and wow, I’m impressed! This lectin-light, gluten-free, sugar-free, vegan brownie is delicious.

Greens and Sweet Potato Hash Bowl

Lately I’ve been eating out more than usual, in a place in Dallas called Origin. They are Plant Paradox friendly, although I’m not sure they are aware what the Plant Paradox is. They have these bowls that you can personalize and the one that works for me is half plain sweet potato hash, half Brussels sprouts. I also add some fresh arugula, and sometimes grass-fed hanger steak or pasture-raised eggs. So I created this bowl at home, with my adds-on I wish I could find in a restaurant. The result was delicious.

Kohlrabi Chicken Soup with Lemongrass and Ginger

I have been having my eye on kohlrabi for quite some time, and I have been exploring different ways to cook it and eat it. In my new cookbook I have a recipe for kohlrabi fritters, and I enjoy eating it raw as part of my raw veggie platters. But this soup must be my favorite so far. Reintroducing Beans. Three Easy and Delicious Recipes

After 2.5 years following the plant paradox program, I finally reintroduced beans and legumes and I’m having fun. I don’t seem to have reactions to beans if properly prepared, but we did notice that my husband doesn’t tolerate lentils even if soaked and pressure cooked. This to say, reintroductions, whatever they are, are bio-individual and different from case to case; and the best way to find out is to try. If you feel you are at that point, here there are few ideas on how to prepare black beans, Lima beans and chickpeas to significantly lower their lectin load. Plus, three ideas and recipes for how to incorporate them in your daily menu. They are all as lectin-light as possible and low hisatmine, if you tolerate beans.

Cabbage Soup. Simple, Soothing, Low Histamine.

Like with many of my recipes, this soup was created when a bunch of random ingredients in my fridge needed to be purposed, plus a day when I actually felt like a soup. Whole Roasted Cauliflower with Pesto

I used to eat a whole roasted cauliflower in a restaurant here in Dallas. However, I just found out that their pesto had cheese, so all this time I thought I’m not eating dairy, I was actually, every time I was going to this restaurant (fortunately, not that often). So I’m going to start making my own whole roasted cauliflower and sharing the recipe with you, because is delicious and super simple to make.
