Lectin-Light Adzuki Beans Brownie with Olive Oil and Macadamia Nuts

There is a big preconception out there, that if you are following the Plant Paradox program you can’t eat beans. To quote Dr. Steven Gundry, “you can eat beans, just detoxify them first”. So, if you have passed Phase 1 and Phase 2 of the Plant Paradox and willing to give Phase 3 a try, beans and legumes are a new fascinating world to explore. It didn’t take me long to use beans to make a sweet treat and wow, I’m impressed! This lectin-light, gluten-free, sugar-free, vegan brownie is delicious.

Greens and Sweet Potato Hash Bowl

Lately I’ve been eating out more than usual, in a place in Dallas called Origin. They are Plant Paradox friendly, although I’m not sure they are aware what the Plant Paradox is. They have these bowls that you can personalize and the one that works for me is half plain sweet potato hash, half Brussels sprouts. I also add some fresh arugula, and sometimes grass-fed hanger steak or pasture-raised eggs. So I created this bowl at home, with my adds-on I wish I could find in a restaurant. The result was delicious.

Lectin-Free Latkes with Homemade Apple Sauce

Two days before Hanukkah 2019 starts and I had to give lectin-free latkes a try. It’s not really the first time I’m making something similar but it is the first time I did a little research into Jewish holiday food. It must be the influence of The Marvelous Mrs. Maisel, but also inspiration from my friend Lauren Margolies (@laurens_lunchbox on Instagram) who provided a little guidance into Hanukkah traditional food.

Chestnut Pie with Root Vegetables

I’ve been away from our Dallas home, traveling in Europe, for more than three weeks, and I’m still away while I’m writing this. One of the highlights of this trip were chestnuts. First freshly boiled chestnuts in Romania, then discovering chestnut flour in Denmark. So I’ve been making this lectin free pie with seasonal root vegetables and a mix of chestnut and tigernut flour and I loved it so much I couldn’t wait to share it.

Parsnip Apple Cake with Rosemary and Olive Oil

Fall is here and so my desire to eat more grounding, earthy foods. And even though Dallas weather doesn’t show many signs of fall yet, days are shorter and more inviting to baking. And so my three lonely parsnips I had in the fridge and the small organic fuji apples I bought few days ago found their way to my heart through this super delicious and warming parsnip cake.

Avocado and Collard Greens Superfoods Smoothie

Wow, if y’all know me you know I’m not a smoothie person. But I think I changed my mind, at least for the spring and summer to come. I’ve been wanting to get some superfoods for a long time and always been taken aback by the prices. They are super expensive, at least some of them, but I figured I’m worth it and finally took the plunge and bought spirulina, maca powder, Lion’s Mane and chlorella. And this superfoods smoothie is my new favorite food in the world.

I first discovered I can make spinach pancakes while reading one of my favorite cookbooks, inspired by Nordic cuisine. I made them once and since then I keep thinking of them. This one sheet pan easy meal was born from another attempt to find ways to eat artichokes. I don’t know about you, but those artichoke hearts – frozen or from a jar – are not exactly the tastiest thing you can eat, and I’m a little bothered by texture.
