I love okra in all its forms, and today I bought some organic one at Whole Foods, thinking I’ll make oven baked okra chips. But I ended up wanting a more warming meal, and stew was also a perfect way to use my leftover chicken stock I had in the fridge. So lectin-free okra stew it was for dinner.
This salad was born when I discovered the Sea Tangle Mixed Sea Vegetables in Whole Foods. I’m not sure if this is available in other stores, but I’m sure you will find some sort of compliant sea vegetables elsewhere. Just make sure they have no weird ingredients added, they should only need salt. This is easy to put together and works as dinner but also can be packed for a workday lunch.
How is that time of the year again? I’ve made a similar lectin-free sweet potato pie last year for Thanksgiving, and couldn’t wait to re-test it and improve it for this year’s fall season. And I though I’d do it earlier this year to give y’all time to prepare. Move over pumpkin, sweet potato got our back this fall.
It took me a while to figure out how to name this dish. The inspiration was a Romanian dish called ‘ciulama’, but I figured that would be difficult to spell and pronounce for non-Romanian speakers so I decided to leave it out. Of course, I put a Plant Paradox spin on it, cut out some of the saturated fat and made it a little lighter and lectin-free. This Creamy mushroom and chicken dish is the perfect meal for the colder season, and one of those that the entire family will love.
These three ingredients energy bites, or call them turmeric macadamia fat bombs, are not only pretty but also tasty and healthy, and super easy to make, lectin free, sugar free. They are made of coconut flakes, macadamia butter and my (NOT so) secret ingredient, the Turmeric Tonic created by the amazing ladies at Further Food.
Nori rolls are one of my favorite foods to eat. They are relatively easy to make, once you learn how to roll it using a sushi rolling mat. This is one of the food combinations that work well in a nori rolls, but this is also a frame for you to experiment with whatever you have available.
I don’t remember when and how I discovered California Country Gal grain free, lectin-free baking mixes. But I know I’ve used them so many times in so many shapes and forms, that I started experimenting with making my own recipes. Lectin-free bagels is one of them, even though is not really a new recipe, just a new way of using the mix and their recipes.
This is more than a recipe, is a healthy and delicious lectin-free dinner idea. When I posted on Instagram our dinner yesterday, I had not planned to write the recipe down, but I got so many requests for recipes for both the salmon cakes and the spinach pesto that I had to retrace all my steps and put it all together.
I usually start my posts with telling you how easy is to make a recipe. Well, I would lie if I said this was easy, and that’s the reason I don’t make it more often. It’s funny because when you look at it seems simple, but when you start spreading everything on the working surface and cauliflower rice is everywhere, well, expect a mess. This is another Danish inspired recipe, super easy and although in Denmark is served mainly on special occasions, like Christmas, I don’t see why not having it more often. I personally love cabbage, any type, and I welcome new ways of cooking it. What I love the most in this braised red cabbage is the amazing flavors given by the spices used, especially cinnamon and cloves.
