This version isn’t an original recipe so much as a technique that has been passed from one great cook to another. I first discovered it through a fellow Dallas food enthusiast, who had adapted it from a method by Chef J. Kenji López-Alt, inspired in turn by Michael Solomonov. Like many of the best recipes, it has traveled through kitchens, evolving along the way while keeping what makes it so good.
The Secret to an Ultra-Creamy Texture and a Mellow Garlic Flavor
The ingredients are wonderfully simple: tahini, fresh lemon juice, garlic, cold water, cumin, and salt. The real magic, however, is in how they’re combined.
Instead of blending raw garlic directly into the tahini, the whole, unpeeled garlic is first pulsed with the lemon juice and then strained. This extracts all the aromatic garlic flavor while leaving behind the fibrous bits, resulting in a smoother, more balanced sauce. Even though the recipe uses an entire head of garlic, the finished sauce tastes mellow rather than sharp.


The final step is adding very cold water gradually while whisking. As the water emulsifies with the tahini, the mixture transforms into a light, silky sauce with a beautiful creamy consistency. Ingredients
- 1 cup tahini
- garlic cloves of one whole garlic head, unpeeled
- 2/3 cup lemon juice (about 4 lemons)
- cold water
- 1 teaspoon cumin powder
- salt to taste
Instructions
- Add the lemon juice and the unpeeled garlic cloves to a blender.
- Pulse them about 15 times until all the garlic gets crashed.
- Let them infuse for 15 minutes.
- Strain the mixture to remove all the skins and the bigger pieces of garlic (press with a spoon to get all the juices out), and mix the strained liquid with one cup of tahini.
- Start adding cold water one tablespoon at a time and continue to mix until you get a soft, creamy texture.
- Season with cumin and salt to taste.
- Store in the fridge in an air-tight glass jar.
Notes
This dressing can be easily stored in the fridge and lasts for at least one week.
