Description

This creamy tahini sauce is smooth, tangy, and packed with rich sesame flavor, balanced by mellow garlic, fresh lemon juice, and a touch of cumin. Made with just a handful of pantry ingredients, it’s an easy, versatile sauce that pairs beautifully with roasted vegetables, salads, grilled meats, sandwiches, grain bowls, or homemade hummus.


Ingredients

  • 1 cup tahini
  • garlic cloves of one whole garlic head, unpeeled
  • 2/3 cup lemon juice (about 4 lemons)
  • cold water
  • 1 teaspoon cumin powder
  • salt to taste


Instructions

  1. Add the lemon juice and the unpeeled garlic cloves to a blender.
  2. Pulse them about 15 times until all the garlic gets crashed.
  3. Let them infuse for 15 minutes.
  4. Strain the mixture to remove all the skins and the bigger pieces of garlic (press with a spoon to get all the juices out), and mix the strained liquid with one cup of tahini.
  5. Start adding cold water one tablespoon at a time and continue to mix until you get a soft, creamy texture.
  6. Season with cumin and salt to taste.
  7. Store in the fridge in an air-tight glass jar.

Notes

This dressing can be easily stored in the fridge and lasts for at least one week.
