Instant Pot Beef Taco Bowl with Tostones

I’m finally falling in love with my Instant Pot. I love it for the convenince when having to cook this type of meal. A steak cooks unattended until super soft while I prepare the rest of the ingredients. And since I’m not a planner, a fast cooking device suits me much better than a slow cooker. We rarely can decide what we are going to eat a few hours in advance. This taco bowl is delicious, healthy, lectin-free and with few modifications, low-histamine.

My Lectin-Free Take on Saag Paneer

This must be one of my favorite lectin-free recipes I adapted in a while. I mentioned in a previous post that I have more of a green tooth these days, and whenever I find a delicious way to get a lot of greens in one meal, I’m super happy. It’s a fast, inexpensive, nutritionally dense and anti-inflammatory dish, and doesn’t require precision. And it was a hit even with my husband who usually has to be tricked to eat more greens. This morning, while I visited out local grass fed shop, Burgundy’s Pasture Beef, I also collected an issue of Edible Magazine, the Dallas and Forth Worth edition.
