Whole Roasted Cauliflower with Pesto

I used to eat a whole roasted cauliflower in a restaurant here in Dallas. However, I just found out that their pesto had cheese, so all this time I thought I’m not eating dairy, I was actually, every time I was going to this restaurant (fortunately, not that often). So I’m going to start making my own whole roasted cauliflower and sharing the recipe with you, because is delicious and super simple to make.

Lectin-Free Latkes with Homemade Apple Sauce

Two days before Hanukkah 2019 starts and I had to give lectin-free latkes a try. It’s not really the first time I’m making something similar but it is the first time I did a little research into Jewish holiday food. It must be the influence of The Marvelous Mrs. Maisel, but also inspiration from my friend Lauren Margolies (@laurens_lunchbox on Instagram) who provided a little guidance into Hanukkah traditional food.

Raising Lectin-Free Chicken. Interview with Dan Walter, Owner and Farmer at Pastured Steps in Dallas

When a member of our community, Margaret, wrote me to ask if I’m interested in pre-ordering 100% lectin-free chickens raised in the Dallas area, I had no hesitation: I ordered immediately five whole chickens. I would have ordered more but I live in a small place and have a small freezer. Few months later, when my chickens were ready to pick up and after coming back from a month long holiday in Europe, my husband and I went to visit Dan at Pastured Steps. There was a delivery option available, but I really wanted to meet one of the very few farmers in the US and the world who decided to raise lectin-free chicken. And I’m so glad I did. There is something about knowing the farmer behind our food. We arrived just before sunset and were even rewarded with a beautiful Texas golden light.
