Cooking ground chicken this way is one of my favorite ways to have a versatile, high-protein addition ready for all kinds of meals. I’ve always loved the flavors of Italian sausage, but it can be difficult to find a store-bought version with simple, good-quality ingredients. This is our easy way to get that familiar flavor and texture at home, with no casings and no shaping required. It’s simply ground chicken, a handful of seasonings, and a cooking technique that gives it the juicy center and caramelized edges of fresh sausage.
The seasoning mix is simple: garlic, lightly crushed fennel seeds, sweet paprika, oregano, salt, and freshly ground black pepper. This makes a mild Italian-style sausage, but if you like a little heat, add a few drops of red Tabasco or a pinch of red pepper flakes.
Ground chicken package sizes vary by country. I use a 400 g package, while a standard 1 lb package in the US is about 454 g. Either works well for this recipe, and there’s no need to adjust the seasonings for the small difference in quantity. If you use a 1 lb package, just add one extra pinch of salt (very little).

How to Make Italian Chicken Sausage Bites
Start by combining the ground chicken with the garlic and seasonings, mixing just until everything is evenly distributed. Cover the mixture and refrigerate it for about one hour. This gives the garlic, fennel, and herbs time to flavor the meat before cooking.

When you’re ready to cook, heat a large sauté pan over medium heat and add the extra virgin olive oil. If you’re using stainless steel, let the empty pan preheat well before adding the oil.
Instead of forming patties or meatballs, scoop heaping tablespoons of the chicken mixture directly into the hot pan, using a second spoon to help release it. Don’t shape or flatten the pieces. Leaving them rough and irregular is part of the technique: all those uneven surfaces will eventually become golden, caramelized edges, while the larger pieces stay juicy in the center.

Let the chicken cook undisturbed for about 5–7 minutes, or until the underside develops a good golden crust. Flip the pieces and allow the second side to brown as well.
Once they’re golden on both sides, use the edge of a sturdy spatula to break them into smaller, bite-sized pieces. This exposes new surfaces to the hot pan, so you get another round of browning and even more flavor without drying out the chicken. Toss and cook just until the newly exposed edges are golden and the chicken is cooked through.

The result is juicy, rustic chicken sausage bites with plenty of caramelized edges and that satisfying fresh-sausage texture—without stuffing casings or shaping a single piece.

How to Serve Italian Chicken Sausage
One of my favorite ways to use these chicken sausage bites is as a protein-rich topping for creamy vegetable soups. They’re especially good with my Creamy Red Lentil and Cauliflower Soup, adding a savory, caramelized contrast to the smooth and creamy soup.
They’re also incredibly versatile. Mix them into a tomato pasta sauce and serve with your favorite pasta, fresh basil and Parmigiano, pair them with eggs for an easy high-protein breakfast, add them to a salad or grain bowl to make it more substantial, or use them as a pizza topping. And they’re delicious as they are, reheated, as a quick protein snack.

How to Store
Let the chicken sausage cool completely, then transfer it to a covered glass container and refrigerate for up to 2 days. I prefer to gently reheat the pieces in a skillet before eating them.
For longer storage, freeze the cooked sausage in an airtight, freezer-safe container. Portioning it before freezing makes it easy to take out just what you need for breakfast, a bowl of soup, or a quick meal.

Instructions

- Using the edge of a sturdy spatula, break the larger pieces into smaller, bite-sized chunks. Toss and continue cooking until golden in spots and the chicken is completely cooked through.
