Made with creamy goat or coconut yogurt, crunchy sugar-free and lectin-free granola, and frozen wild blueberries, this parfait is cooling and packed with nutrients and will give you a boost of energy without the sugar crash. Ingredients
- 1 cup lectin-free and sugar-free granola (check post for recipe), from the freezer is best
- 1 cup goat yogurt or coconut yogurt
- 1 cup frozen wild blueberries
- 1 teaspoon raw, local honey (or Manuka honey), Yacon syrup, or Allulose syrup for a lower-carb version
Instructions
- Prepare four jars or glasses. I use jars with lids (3/4 cup each).
- Start with a layer of granola, followed by blueberries and yogurt, and a drizzle of honey.
- Repeat until I fill up the jar, finishing with some granola and blueberries, and a drizzle of honey.
- If you don’t serve immediately, close with the lid and refrigerate it.

These quantities make four servings, about 3/4 cup each.
