Chimichurri with Parsley, Chives and Sumac

This fresh, bright and flavorful chimichurri with parsley, chives and sumac goes perfectly with all kinds of meats but also with grilled or roasted vegetables.

What you need to make chimichurri

Ingredients

- Parsley - Chives - Dry oregano - Sea salt flakes - Ground pepper - Sumac - Apple cider vinegar - Extra virgin olive oil

Tools

We recommend a food processor and NOT a blender.

Sumac is made of the dried fruits of the sumac bush and is mostly used in middle eastern cuisine. I think using apple cider vinegar in combination with sumac will give a similar taste profile as red wine vinegar.

Add the parsley, chives, oregano, sea salt flakes, and pepper to a small food processor and mix until chopped.
