Yogurt and Granola Parfait, a Healthy Summer Treat (Sugar-Free)

Made with creamy goat or coconut yogurt, crunchy sugar-free, and lectin-free granola, and frozen wild blueberries, this parfait is packed with nutrients and will give you a boost of energy without the sugar crash. Whether you want a healthy breakfast, a satisfying snack, or a light dessert, this sugar-free yogurt and granola parfait is the perfect healthy treat.

Start with a batch of lectin-free and sugar-free granola

For this recipe, you must make our crunchy lectin-free and sugar-free granola with green plantain. This recipe is very easy to make, and a double batch will last you for weeks.

It can be stored in the freezer, and it doesn’t need thawing time. Such a great meal prep item!

This homemade granola is gluten-free, sugar-free, lectin-free, and dairy-free. It’s made with a mixture of nuts, coconut, and just a tiny amount of dry figs or dates (or sometimes I use unsweetened dry sour cherries), green plantains, and hemp seeds. It’s so delicious and so easy to store, and it can be personalized.

Ingredients for four 3/4 cup servings

For this parfait, you can use goat or sheep yogurt or coconut yogurt if you are vegan. Goat and sheep dairy is so much easier to digest because it is made of A2 casein milk. Of course, if you eat cow’s dairy, you can use your favorite yogurt, like regular or Greek yogurt.

Whatever you choose, get a full-fat yogurt. Skimmed dairy products are devoid of their quality. Fat will help you stay full and satiated and will keep your blood sugar stable.

You need:

  • 1 cup lectin-free and sugar-free granola (check post for recipe), from the freezer is best
  • 1 cup goat yogurt or coconut yogurt
  • 1 cup frozen wild blueberries
  • 1 teaspoon raw, local honey (or Manuka honey), or use Yacon syrup or Allulose syrup for a lower carb version

How to make this healthy yogurt granola parfait

I love to use jars because I can prepare them in advance, put the lid on and store them in the fridge. They are also easy to put in a lunch box. But if you serve them immediately, you can make them in a glass.

I start with a layer of granola, followed by blueberries and yogurt and a drizzle of honey. I repeat until I fill up the jar, finishing with some granola and blueberries and a drizzle of honey.

This is such an easy summer treat to put together and so convenient. Granola will last for a few months in the freezer, so you can make a few double batches and have it all summer long.

You can use fresh berries if you want, but frozen fruits will give it that parfait coolness, which is perfect, especially during the hot summer days. If you choose fresh berries, keep the parfait in the freezer for 20 minutes so it gets very cold.

This healthy parfait is a lifesaver whether you want a healthy breakfast, a satisfying snack, a sweet treat, an afternoon pick-me-up, or even a light dinner.

If you have a batch of granola in the freezer, it only takes 5 minutes to assemble this yogurt parfait. Have it on the spot, or make it for later. Enjoy it at home or take it with you for a picnic, garden party, or work.

This granola is vegan, so if you don’t eat dairy, a coconut yogurt will be just as good.

Instructions

Prepare four jars or glasses. I use jars with lids (3/4 cup each).

If you don't serve immediately, close with the lid and refrigerate it.

Notes

These quantities make four servings, about 3/4 cup each.
