Turmeric – Macadamia – Coconut Sunshine Bites

Description

A superfood tasty and healthy snack


Ingredients

  • 1 heaping cup coconut flakes
  • 2 tablespoons macadamia butter
  • 2 scoops of Turmeric Tonic (Further Food) OR you can use 1 teaspoon of this mix: turmeric + cinnamon + nutmeg + ginger + a tiny bit of black pepper (to activate the curcumin in turmeric)
  • 1 tsp full fat coconut milk
  • extra shredded coconut or/and ground macadamia (for topping)

Instructions

  1. Add the coconut flakes to a high speed blender or food processor and mix on high until the coconut starts to get sticky and oily. You may have to scrap the edged a few times.
  2. Mix the 2 scoops of turmeric tonic with the one teaspoon of coconut milk until you get a paste (the coconut milk is purely used to dissolve the turmeric tonic powder – I added this step because I used a blender that is very tall and just throwing the turmeric powder in there would had been a waste, if you have a normal food processor you can just add the powder to the coconut).
  3. Add the turmeric paste and the macadamia butter to the blender and pulse until all mixed (you may have to scrape the walls). 
  4. Put the mixture in the fridge for about 30 minutes, take out and shape into small balls (it makes about 6, 7 balls) and cover in shredded coconut. 
  5. Store in an air tight glass container in the fridge.

Notes

This quantity makes 6, 7 small balls, just double or triple quantities for more portions. If you triple, there is no need to add 6 scoops of turmeric tonic, you can add about three, four and you will be fine. You can also make a big batch and freeze them.
